I think it should make it so the engineer, won't be alerted when you put this on, and the only thing it would do is disable it, but not kill it

Yes! I was thinking something similar, but with a slight variation:
i: Causes sentry to fire in random directions, hitting enemies and allies alike.
+: Increases ammo consumption by 100% while attached.
-: 100% Sapper Damage Penalty.
-: 50% sapper health.
-: Sapper breaks once ammo is fully drained.
i: Plays a catchy tune while causing havoc. :3

How about that? Any good?

I just had a great idea for a sapper, when you put it on its visible but difficult to notice, no engineer siren, no imediate damage but when the sentry fires it causes less damage and it backfires to damage the sentry.
I dont know if this has been done or not but if I find some one do it later i will call you out on it.

Nice concept, if a bit unorthodox

No sapping sounds, but takes longer to sap to death
or a reduction in machine effeciency

once engi/pyro breaks sapper it causes bleed(zappes them) for 8 secs 20% dmg penalty and disables sentry for 9 seconds after broken :)

Once fully zapped a building will support the opposite team.
Team colour is not changed, but light and particle effects do.
Does not effect sentries.
Sentry is imobile until engy/pyro removes zapper.
-100% damage
Team can use enemy teleporters once teleporter is zapped

How about it sends a signal to your teem so it shows up through walls with a enemy teamed outline while it is disabled, and in the shape of a sentry? And if the outline would remain for about a minute or so after it is sapped.

Changing the building's team would be way too overkill so if I had to suggest a special ability i'd say it takes 50% longer to sap but while it's attatched to a sentry, the sentry fires in random directions and hurts ALL players it hits.

i think this should be a type of sapper that put's engies buildings to sleep or better saying disabling them (or slowly drain their HP) and it shouldn't damage it it should like make it harder to break like need to hit it 3 times with a wrench/neon anihilator and make it require 2 hits with the homewrecker
