Okay, this is pretty interesting
I suppose it's just because it's a typical Gmod thing, and I'm really not much of a fan of Gmod, but I don't think it's that great :(
Love the skyrim mods, by the way, very great, adds an additional sense of immersion to the game

The lag is caused because of the fixture being an entire fixture. The 9x9 cubes are all welded together with a force limit of 1, meaning pretty much any disturbance will break the weld. Also, all of the cubes slightly overlap such that when you unfreeze the structure, everything collides.

That's a lot of collisions. 26 for the inner cubes, 17 for the face cubes, 11 for the edge cubes, and 7 for the corner cubes. That's 7x7x7x26 + 7x7x4x17 + 7x12x11 + 8x7, which adds up to 13,230 collisions. That's quite a bit.

There's not quite as many welds to consider, as I didn't weld all combinations of cubes. Instead, I welded them in such a format that it would be balanced (thus the fairly spherical spread) but also such that every cube was part of the 9x9x9 fixture.

In other words, there's tons of stuff going on in the initial unfreezing of the 729 cubes.

Very cool concept, wondering, what cause the lag?
