Video of how to play The Aztecs.
This will tell you what to expect out of the special units, what to expect out of the playstyle, and what victory conditions to expect to dominate with.

Victory Conditions
Hello, if you really didn't want to watch the video I'll give a quick rundown of what you probably should be thinking if you are randomly paired up with the Aztecs or are just new to Civilization and think they would be fun to play!

Victory Conditions

  • Domination
Domination is Motezuma's game all the way considering that's the way they were in the real world. Down to hard facts - the Jaguar is a unit that is extremly powerful early on. Unfortunately, if you are not attacking right away you'll lose some of the value of Montezuma. Gaining early land is key with Montezuma. Taking out units will also reward with with culture. That culture reward can be put into whatever early Social Policy you believe to be best. Remember, you'll even gain culture from killing barbarians. Highly Recommended.

  • Science
Chances are you will have a Capital taken over early on in the game. In most cases, you'll want to burn the extra cities the enemy has built already (not all cases). The extra cities you'll have will generate quite a bit of science. Tag on the Jungle start bias you'll get that +2 science if you keep the jungle tiles around once you build a University. This can be very handy if you are looking to go down a scientific track. Recommended.

  • Culture
Based upon the personality trait that Montezuma has you'll get extra culture from your kills. This extra culture can be great for starting up a Cultural Victory. Kill many barbarians along with other AI units to gain an extremly large amount of culture. Even filling out the Honor tree for additional culture per kill isn't the worst idea. Stay small and destroy as much as you can to obtain a victory in this manner. Recommended.

  • Diplomatic
Montezuma's Revenge! There is no such thing as a Diplomatic Victory with Montezuma in majority of the games you'll play with him as the AI. There is a reason for it. There is no personality trait. All of his abilities/buildings do not support a Diplomatic Victory. As always, it is possible to win in this method but is more difficult than the others. Not Recommended.
Social Policies
Won't get into as depth as the Victory Conditions only because Social Policies can usually go anyway for any Civ and still win. Will only note those that are very important to each Civ.
  • Liberty
If you are going with the Domination Victory via Jaguar Warriors and later units then this is a good option. Expanding is always a good thing to do with a Domination Victory. The bigger you are, the stronger you are - so as long as you have luxury resources to back up the expanded cities/population. The extra culture per kill will help fill out the Social Policy quicker than normal so you can move on to your second rather fast. Recommended.

  • Tradition
For those that are looking for a Cultural Victory ignore the Liberty policy track and go with Tradition. It'll help increase the happiness and amount of people in your Capital. Even though this is for small empires you could still be a war-mongering lunatic while filling this tree out. Just remember to keep only the Capitals of other Civilizations to reduce the amount of unhappiness generated. Recommended.
The rest are really up to you on how you're playstyle will be for policies, Tradition for hunkering down with few cities - Honor for cutting down enemies early on - Liberty for expanding like a mad-man but again, that goes for any Civ, not just the Aztecs.
Factoids
  • The Spaniards were surprised to learn that Montezuma bathed twice a day. Europeans hardly bathed at all.

  • Montezuma II's headdress was made from the feathers of over 250 birds.

  • The cocoa bean was highly treasured in the Aztec Empire. In fact, the bean was used as currency, as well as Aztec food. The word chocolate comes from an Aztec/Mayan word chocolatl.

  • There are actually three Aztec calendar wheels - there is a third big wheel called the calendar round. The two major cycles (the tonalpohualli and the xiuhpohualli) were interlocking, and every 52 years they would align again. This was a sort of Aztec "century", and was a reason for religious celebration.

  • The Mexica people of the Aztec empire had compulsory education for everyone, regardless of gender or class. People in the Aztec society were generally well educated, though boys received a wider education than girls.

You appear to not mention the fact how POWERFUL Floating Gardens are for a Science Victory, The Aztecs are one of the strongest science civs out there because of their amazing mid - late game growth.

When playing aztecs you might want to limit your honor investment to 1 point. and get full tradition. Aztecs can have a bigger capitol much earlier in the game. Floating gardens is 15% Food and not growth. combine it with temple of artemis and you have 25% more food in your cap.

With the massive buff they gave barbs in early game (BNW) you quickly make up the cost of your second or even third civic choice.
also its hilarious with raging barbs.
you also only need to get the first level not complete the tree theres no harm in that, especially how fast you make it up. often even without raging barbs there are at least one or two encampments close by i believe you only need about 5-6 barb kills to make the civic back and thats easy

Suppose I didn't include that specifically due to the fact that it's a good strategy early on - but if you aren't focused on winning the game very early on with Domination then you could be in a world of hurt. Regardless, the strategy to get Honor and double up on the Culture benefits is a good idea but trading it out for Liberty or Tradition tends to come to bite you in ass later in the game IF you haven't had luck with killing a ton of Barbarians etc. Just seemed too situational to really include it but is a good strategy nonetheless!

Thanks for checking out my guide, really appreciate the input!

No recomendation for early honour tree to double the culture bonus from barbs?
