What really makes the game a chore is, that you have to do dozens of side missions between each main mission, to get the needed level and Ship for the Main Mission.
Actually, this isnt even "Sandbox". This is "Lack of features and story".
A mixture of bounty hunting, mining and trading is not "a sandbox game and you make your own story as you progress".
Trading and mining is not grinding. Collecting blueprints or artefacts is. That was a design decision and it's also similar to Elite but much less than grinding games like WoW.
Steering can be done in many ways, you don't need to use default way, you can change it to steer with mouse or with WASD, for example.
As for your final note, I didn't understand it. If you're talking about the music, all music in SPG2 is stock music which means if Mass Effect has it (I know Star Trek has one same track) it means they bought stock license just as us. Nobody is infringing any copyrights.
