Things that help include magic resist, magic reflect, a variety of strong resists (which if you managed to reach him with Permadeath, at least the level 15 version of him, are likely decent).
If you intend to melee him, you'll want very good block and/or dodge in addition to everything else (resists, reflect, etc.) Nothing has to be perfect, and instead of worrying about maximizing any one stat, work on a more generalized toughness, because as I said, he has a variety of spells and attacks
In any case, invis potions, inky hoglanterns, and/or other ways of escape are good. If you see him, eat your best food, use your best defnesive potions, 'shrooms, and wands, and be ready to turn invisible or teleport away to heal if you get into trouble.
It's VERY tough to kill him only with magic, btw. You can hurt him but it will take a while.
I strongly recommend buying EVERY SINGLE CLOCKWORK SAWBLADE that you see on your way to him, especially if you are a melee build (thrown weapons receive melee bonuses, whereas bolts do not). They are probably the best single-target attack you can use against him (there are others that are really good, but clockwork sawblades feel like a magic death touch compared to the others).
1. If you select dual wield + a weapon skill, the weapon skill's bonuses will be multiplied by 1.5 if you actually are wielding two of those weapons. So with dual-wield daggers, you'll (generally) do better with two daggers than a sword + dagger. One of the issues with daggers, though, is that really good ones are rarer than other weapon types, which is PROBABLY (I'm guessing) why you were wielding a sword.
2. Demonology is a funny skill. If you put too many points into it, you can cancel out some of the good things that it gives you. You either want to put 2 points into it, or 5 (never 6!!!). I STRONGLY recommend that you stop at 2. Demon Form sucks, pure and simple. On the other hand, Celestial Circle is awesome. Just keep in mind that if you move, you lose it.
3. Dodge itself is a decent skill, but I recommend that (at least for a beginner with a melee build), that you go with a more block-centric builds. If you are going to focus on dodge, you pretty much have to get lucky with the kind of gear that you get, as most really good armor has negatives to nimbleness.
That said, if you managed to get al lthe way to him having just started to play, well that's actually pretty good. Most peopel never beat him so don't feel bad about that. Roguelikes are NOT SUPPOSED TO BE WON by most people! Keep that in mind. I know one person who actually WRITES roguelike games, and he admits that he's never beaten Dredmor, and has actually never beaten any game that he, himself has written.
the goal of a Roguelike is to get as far as you can get. And then learn from your mistakes, and do better next time (if you can). Just getting one level further or figuring out something you nevver new before, should be considered a vidtory. If you could get to Dredmor (even not having been able to kill him) you ought to be playing on a harder difficulty level. That also will help prevent you from reaching him when you actually are not even close to being prepared. That's really the worst part of playing on too easy a difficulty without PD, is that it's too easy to reach the end so you really can't tell how much your gear actually probably sucks.

Be careful though... even though the title of hte thread is 'the builds that won', that you can actually win with almost any build, some just require more skillful play and luck than others. Also a few posters didn't actually read the description, and a few of these skill combos were not on the hardest difficulty level meaning that 'your mileage may vary' (YMMV)
Haha, no problem, considering how many skill trees there are and how game-changing can they be this game is a huge time sink.
According to Steam I have played Magicka for over 1500 hours.
Yep. I have this little indie 2d flying game that I don't even remember playing that steam tells me I've sunk over 300 hours playing.
