If you get a stone pillar between you and Crawmerax and keep your distance, you can sometimes hit the back as he shuffles past the pillar on the west side, or shoot through the gap between the two pillars in the east as he shuffles around them. Of course, doing this while his minions are after you is easier said than done. Be careful, if you get close enough for him to melee you (even with the stone pillar blocking it) he will turn to face you, ruining your shot.
Another way to hit the back is to shoot rockets (from the safe spot on the ledge) at the tallest spine on his back. If you hit the spine, the back spot will be caught in the blast. You can also use the Leviathan (or Jackal if you have it) to lob explosive shots over him and hit the back spot. It's hard to hit and likely you will run out of ammo, so Roland and Brick can do this better with a class mod that regenerates ammo.
Someone playing Liltith can Phasewalk behind a pillar, and sidestep out with a sniper rifle ready to hit the back.
Mordecai has no easy shortcuts here, but at least he's good at sniping. Best advice i can give someone soloing with Mordy is to use Bloodwing with the Aerial Impact skill to stun his minions as needed, it's helped me a bit. Best of luck, whatever strategy you use.
