I uninstalled/unsubscribed from all my mods and they're still there.
I waited a while in-game to see if the game would refresh the mod list but it didn't do so.

When this happened to me, I had to uninstall, reboot, reinstall.

I'll reboot it then, I reinstalled it today because I got the sudden urge to play the Faerun mod after reading R.A. Salvatore's books...

You can go to My Documents\My Games\Sid Meier's Civilization 5\ and remove the mods yourself. Also (it's been awhile and I am not sure on this), deleting civ5modsdatabase.db from the cache folder should make it refresh the mod list.

Make sure you delete them from the MODS folder in documents, also clear the cache.
