Landmark animal extinctions and the Delectation achievement - How to get it (by editing)
As it stands it is impossible to get the Delectation achievement (polish off all landmark species) because the triggers for extinction don't work properly. Thanks to a response from Scarabaeus (in this thread http://steamcommunity.com/app/80200/discussions/0/846959998085041049/) I've found a way to trigger it by editing the lua files.

The method
In the 100_base lua file search for =42. This can be found at ...\Fate of the world\share\fotw\policies. This number refers to the 42 species and should be changed into =1 Probably only the third one you find is relevant, but it can't hurt to replace them all. After the third 42 is the following line:

type="g_tag",tag="game_nomnomnom",pred=">=",value=12,report=false

I'm not actually sure what it says but the =12 should also be replaced with =1.

After saving the file start up FotW and play until you get your first extinction (probably either the black rhino or the walrus). This is easiest in the Doctor Apocalypse scenario and may be only possible to achieve here, as the code refers to it at some point. As soon as you cause the first extinction the achievement should trigger.

Obviously this doesn't fix the game but at least it allows you to get all achievements.

Italian Translator here. I can confirm many landmark species don't trigger as they should. Unfortunately, it seems (to me at least) that Red Redemption doesn't exist anymore, since all the people working there now have differente jobs. They left the game in an untolerable state, but the LUA files can be edited as far as I know, and theoretically, unless some things are hard-coded, it's possible to work on fixes. An unofficial patch and more awareness is what this game needs, it's a shame such a project was left in this state.
