You could go to My Documents / My Games / Skyrim and make a copy of your saves folder. Name it after your character and store it in a backup folder. Then you won't have to worry about overwriting your old character's saves.
beware to not override your savefile if you have several characteres.
When you click new you are making a new character, the old character doesn't go away unless you delete those things called saves (they save your character so you can play them again)
