If you are soft and squishy then the trick is to not get hit. Give them something else to shoot at instead.
As for sneaking, well the heavy armour might make it impossible to creep up and pick someone's pocket but for crawling into a good defensive position and sniping the enemy, it has no real effect on the game. When I'm close to a target (meaning mid-range) they can detect me but not find me, so I simply move, wait, move again, etc. Muffle is my friend.
No doubt, I'm missing out on the cool armour skill tree perks available but I had other things to deal with. Perhaps I'll get around to building up the armour stuff later on?
And light armor is not going to offer much protection until you get your light armor skill up. Also, learn how to block.
Stay mobile and use terrain like rocks and doorways to limit the number of enemies that can attack you at once.

I am perpetually over-encumbered myself, so I have no issues with weight or movement...I'm always very, very slow...lol Since running away isn't even an option, it's best for me to have some decent armour to help me survive the odd hit that does come my way.
Light armour looks a lot cooler though. I'm almost embarrassed running around in my silly Daedric Armour. When I get to town, I can't wait to change into my Emperor's Robes of Smithing!
