Edit: If you search around there are a couple of utilities that support multiple characters. Or you can back up your Saves folder (in My Documents / My Games / Skyrim) every time you make a new character.
EDIT: And the manual saves *can* be overwritten - just select it on the save menu. Though it's really just deleting the old save and creating a new one (advancing the savefile number) rather than truly overwriting.
So for each character you need no more than two save files. One for back up and one for when you want to save in case something bad happens. You just need to remember to save a non autosave file before logging off or on another character.
When you load up another characters save file the game will overwrite the old characters info on autosave, which is why you need to remember to hit one of your nonautosave files before changing.
biggest issue is you cant name the save files (or i havent found a way to do it) so you have to go off whats on screen to determine what character, which is why you might want to take the added step of taking the helment off and doing a save whle looking at your face.
