those are a good start.
Frostfall is a realism survival gameplay mod that incorporates more requirements of your Character in order to survive in the game. Don't get it if you are a casual gamer. Get it if you want to take role playing seriously however. Couple this with realistic needs and you got yourself a good extreme survival game....

100 times your carry weight or picked up a spoon is a must have unless you are going to use the console to give yourself money. Also the unnoficial patches, I was afraid to use them before Jen'ln suggested them to me and to me She and Uncle Cooked are experts.

If you need advice better than you are getting her try to befriend Uncle Cookie. He has forgotten more about this game and mods than most of us know,

Focus less on beauty and more on gameplayey is also a good idea. Are you male or female the choose your mods and followers based on that.

Haily had a good suggestion but only after you have played through a few times. And odds are you will play through a few times if you like RPG's this is the king.

I bow to Master Dan as always this is a serious game however in the Novice mode it becomes very easy it you set it at that difficulty the only downside is that is that you will not increase as fast.

The delayed start Dawnguard if you are buying the Legendary edition as well as run for your lives from dragons. There is one for vampires also called when Vampire's attack. If you do not delay the start of Dawnguard it will save a lot of minor questgivers/

Don't worry in my opinion about the beauty mods play the game first then you can use them. They game will blow you away with the regular graphics.

If you want adult mods Nexus is the only place for them and many other mods they have no size limit.

Also I advise staying from any mode that uses SKSE at first before you are comfortable. I still do not use them but I do have SKSE. Those are only found on Nexus, I do not use the SKSE mods myself even though I have them in Nexus mod manager.

There is also a mod that adds 4 guards to your houses that you get through Hearthfire well worth getting and it works well. I have had no conflict with it. Immortal Housecarls to keep Lydia and the other Housecarls alive. I have a soft spot in my heart for Lydia which many do not have but she will warm your heart with her loyalty towards you.

If you're not happy with the way the default follower system works in this game try using a mod like extensible follower framework or amazing follower tweaks to enhance it.

Amen Alder I found out the Unnoficial Patches are essential. I thank God I had friends that told me the same thing you just said.
Basically you don't need mods at first. Unless your game doesn't work, then get the patches. I have 178 hours in and haven't used patches since I don't need them. Just play the game and see what you want to change. That's the best way. I played this for around 100 hours on vanilla, and I still don't use many mods. Mostly graphical mods and some armors.
