Trying to roll-play in Skyrim is a waste of time, since most of the quests force you to act a certain way in order to complete them and essential characters means that you can't just kill a suspicious individual, even if you have an evil alignment.
That said, I'm going to do it anyway.
Soon, I'll be playing a new character (Katie, a Nord raised by Redguards,) whose village was hit by a dragon attack, so she journeyed from Hammerfell to Skyrim and was ambushed by Imperial troops on the way, mistaking her for a stormcloak rebel. She's an alchemist, a spearwoman, and every time I get into an enemy encounter, I'll play it out in my head first, using random rolls to decide the effectiveness of blows. When it comes to choices about where a quest goes, or what is done by the character on quests, and it involves doing something the developers "cough" -didn't think to let you do in-game,- I will simply write down what she does (like getting into a fight with Delphine in her basement during their first encounter,) and play from there.
However, the RPing is not in the game. It's in my mind/basically a form of Skyrim fanfiction. I wish it could be done like in Morrowind, but what are you gonna do?
Addendum: I've begun playing the game, and have already written four chapters of quest records in their entirety, using the GURPS system to determine battle outcomes. Believe it or not, the game is a lot more fun this way; maybe because it's actually possible to fail at certain things.
The actions of my character are an extension of my own personality. For example: I wouldn’t want to be an assassin in real live, so my character won’t work for the Dark Brotherhood. I don’t steal, so my character doesn't steal from friendly or neutral characters. I do however take the effort to really create a character, rather than an avatar of me.
