various texture/mesh mods, Project Reality - CoT, Realistic Lighting and ENB. Maybe Sweetfx, too, if you feel like you need even more.
But that's probably all you'll need.

You find them all on skyrim nexus.

Play Skyrim for about 10 hours, then install mods. [you can add mods to an existing save]

It's good to know what Vanilla Skyrim is all about, that way you know what you want to change and what kinds of mods you want.

Get Dawnguard, then you can get access to some of the best mods, such as:

Get all of the DLCs, and for player mods, I highly recommend the Unofficial Patch series, which fixes hundreds of bugs and glitches in the game.

If this is your first time playing, you definitely should play the game vanilla with some graphic and environmental mods. Google search mods such as Vurt's Flora Overhaul, any high res texture pack. Water mods such as WATER or Pure Waters.
