Mods bring pretty much anything you can possibly imagine to the table. You want to wear pouches, bags, bandoliers, and backpacks on your toon? No problem. You want cloaks? No problem. Wanna double the number of weapons and armor in Skyrim? No problem. Want to make dragons 10 times harder, cause icy water to give you frostbite, and make the Clavicus Vile helm look like Pokemon? NO PROBLEM! =)
Browse through skyrim.nexusmods.com to get an idea of all the things that are out there. Or... Make your own mods with the creation kit.
I'd say you've got no chance of wasting your money.

Skyrim Mod Sancturary (YouTube Video) Part 1 of 67!!!
As for the controller vs keyboard. I personally prefer the controller just because I played on xbox for a year and a half. But I now and then play using the keyboard in an attempt to make the switch eventually. I have with games like Battlefield 3 so it just takes time. I have to agree with Witt^ more buttons is better than less, but it's up to you.
If you ask me, a console only beats a PC for about 6 months after that console was released. After that, console games run on outdated hardware. XBox 360 is like 7 years old. Who plays Skyrim on a 7 year old PC?? =P
That said, it is fairly impressive what they can pull off on consoles. Skyrim looks great on Xbox 360. But it's still just vanilla Skyrim, with Vanilla textures, Vanilla shaders, and no add-ons save for a couple DLC's.
Eat your heart out XBox! =)

Go for pc version you wont regret it. Just everything runs/looks better and the fact you have mods/console commands with mouse/keyboard support you cant go wrong.
True but only this time when the 720/ps4 comes out the hardware will be out dated already due to people having crazy gpu/cpu custom setups in they rig that will make the next-gen consoles look bad.
That's actually a good point. They don't want the new consoles costing upwards of $2,000. Therefore they are limited in the hardware they can put inside it.
