Sailing Mods?
Are there any mods you could get off steam that allows you to sail a boat ive seen one thats a textured horse but did not like the look of that so ca you tell me of any proper sailing mods

Quick search on nexus gives you this:

Sadly it's using a custom, unique ship with textures that could be better, but otherwise it seems to be just what you described.

Another alternative is this dwemer skyship:
