I used a simple mod to help me get started at legendary level and added a fairly powerful follower set at essential in the Sleeping Giant Inn in Riverwood.
I would suggest that you play at expert and think about the right follower. Jennissa in Whiterun is a good option. If you play at master, it pays to invest heavily in enchanting, alchemy and smithing.
I think I found a thread that gives a fix for follower damage:

AttackDamageMult command, which should work for every non-magic attack:
*click follower* (his ID appears)
forceAV AttackDamageMult 0.25
This should reduce the damage done by followers by 75%.

I have a question about this though. Do I have to use this console command every time I load my game or just the first time? And does anyone know of a mod that will do this?
