Sesh is right. my current character is LvL 207, since the legendary add-on from the dawnguard there is no limit. However there is only around 250 perks to choose from so there is no need to go past that LvL. For the record this is the mod i use to level up my character when i start a new game. With it you can get to whatever level you want in about five minutes.

Always train skills, the ones you are not going to be using or are hard to level up, then just work on your most actively used skills. Always get stone bonus, lady if you have aetherial crown, and sleep to get resting bonus. Have a list of easy respawning bandit hideouts to switch between so that you can always train your opponent skills there.

There is no max level anymore, but considering that I'd rather not have to deal with the increasing health tanking enemies who level up with me will show (and thereby the required weaponry twinking), I'm sticking to the old max limit of 81. I'd consider the optimum level to be well below 81, since it is the optimal between having the most significant set of perks for your build and capped loot generation for maximized gear, whilst keeping leveled enemies pacified at lower levels.
Do what I do:
1) Fortify Conjuration/Illusion cost less to 100% and cast Conjure Dremora on Giant and Mammoth Encampment.
2) Fortify Alteration/Illusion cost less to 100% and cast Detect Life upon Solitude or use Telekenesis on a heaviey weapon.
3) Use the Mage Standing Stone.
4) ??? Profit

That's the most legit and quickest way I level my Rouge Nord character up to 92 so far. There are plenty other ways to get leveling skill trees accomplished too. For the Greybeards- sneak attack w/ 30x dagger does the job, obtain an Adept/Expert level trainer who is also a follower when you level- get free training exp that way from any skill, etc.
If you install the uncapper mod you can set it so your skills increase faster (you'll have to edit the ini. Just curious though - why do you want to max out your level?
The max non-legendary level is 81, and it can be a b*tch getting there since a few skills are so hard to level quickly. But you're going to have your main skills completely mastered by level 50 or so. Anything after that is just icing on the cake.

On my last playthrough I even installed a mod that slowed down leveling.

In my opinion, quick leveling detracts from the game. The fun is in the journey, not the destination. But if you just want to skip the fun stuff and get to boring city where there is no more challenge, then check out the UESP wiki and read up on all the skills. It will give you tips on leveling skills.

I agree, It's taken me a while to get to my current level but it's far more rewarding feeling you've "earned" your perks. Also it's the best way of actually learning how to do things. For example, it was only through experimenting with potion-making and enchanting (which I wasn't initially interested in and didn't have a clue about to be honest!) that I got those skill points up and discovered what works and what doesn't.
