Why is Vilkas so hostile against Khajiits? :(

Did you have a large bounty in Whiterun? He might have been functioning properly first and then actually attacking you during your trial.

He beheaded me once when I started on master difficulty long time ago, and I was a male Nord.
Perhaps I caught him in a very bad mood haha.

Yeah, I was actually playing on the highest difficulty :) Guess that's what happens when you're unprepared!

When sparring with Vilcas at the begining of the Companion line you only hit him once or twice and if you are one handed use shield and block a couple of his blows. He will sheath his weapon. If you hit him after he reaches that point he becomes hostile and just keeps attacking.

I blocked his attack with my shield and then struck him once and that was the end of the test for me. My first time through I hit him one time to many and he just kept attacking, and since he can't be killed all I could do was reload from a save and try again. My mistake was pushing the attack button continuoslly. Be slow and methodical hit, block, hit etc.

Also, he doesn't like enchanted weapons. He thinks you're a sissy for using magic, and I've had him get hostile if you don't have another weapon and just keep swinging that enchanted axe at him, so just come at him with something unenchanted. Poor Vilkas can't take advanced weaponry.
