the pinned thread kinda beat you to it... might wanna go check it out, it has a really nice guy there too who will tell you some good mods.

Also, the nexus has a filter system to see the top files the most downloaded, most popular, most endorsed, piece of cake
you might also wanna check out Beginner's guide to modding skyrim. Wouldn't want you to start running into problems before you have started, now would we...
Use this if you're going to have a melee based charecter, it adds in lore friendly variety to melee weapons such as spears, halbreds, hatchets, short swords etc

Dragon Soul Relinquishment (for higher levels)
Lockpick Pro (if you hate the lockpicking mini-game)
Merchants Revamped

GRAPHICS/WEATHER/LIGHTING
Climates of Tamriel
Realvision ENB
Realistic Lighting Overhaul
(note that these three need some patches and careful installing to get them to work together, but when done right they complement each other beautifully. Fortunately each mod's page has very thorough instructions, and Gopher has a fantastic video on YouTube showing how to install them all correctly)

There are many others I really like, but whether you want them or not depends on your playstyle and what sort of special items you want.
I can't imagine playing without Convenient Horses and Item Sorting ModPack mods now. It's the "must have" choice.
Have you played the Vanilla game yet? If so, then go make a list about what you like and don't like about the game, then make your mod decisions based on that. I cannot make suggestions for you, as I may have a completely different play style. If you haven't played Vanilla, than I urge you to do so, so you get a sense of the base game. The basics to modding is an excellent tutorial, as are videos by gopher on youtube. When you do mod, make sure you carefully read the information section, FAQs, and the comment section for any given mod, especially if you want to learn about problems and conflicts with other mods.

Don't just add a bunch of mods in to your game without a/ knowing how to do it properly and b/ knowing what the mods are meant to do and whether they conflict with each other. This is a funny article, and also a cautionary tale of the extremes of what can go wrong if you just go 'these all sound cool!' http://www.gamefront.com/by-the-grace-of-sheogorath-top-10-weirdest-skyrim-mods/ (They've played down the massive amounts of crashes and other instability they experienced because it's less funny than talking about the other stuff, but note they do mention that the game was fairly unplayable.)

There's a pretty cool mod called "Vanilla Skyrim"; it comes pre-installed and requires no additional work.

Only those who have righteously conquered the Vanilla Mod can give effective feedback of adulteration of the base game.
