I have to say Skyrim right now. Amazing fighting. But the other two has a better magic system.
I was joking as I've never played it. However I do believe Arena & Daggerfall are now freely available on the Bethesda site.
Haven't played any of the others, yet! But SKYRIM has been a joy to play. I can only compare it other games I have played. I probably got more hours on this game than all the others I have had in the last 10 years.

Oblivion is a little less about roleplaying and more about actually fleshing out a concept's set of skills. The sense of progress is constant and rewards are plentiful, even if the scaling curve really does need some work, in comparison with Skyrim's.
Skyrim, in my humble opinion, is a nice mix of both. Nothing's defined at the onset and even your Birthsign is freely alterable, provided you can find the required Stones. That gives you a huge margin to just get lost in a role you create as you go along.
At the same time, Skyrim packs a nicely directed flow, in terms of levelling. Momentarily working on skills that aren't part of your core set doesn't feel as crippling as it did back in Oblivion, and the Legendary patch is tailor-made for chronic one-hundred-percenters. No level cap means endless adventures, or at least as many adventures as you can stomach before you've seen the five or six variations offered by the Radiant AI and ended up with ridiculous cavern or mine respawns.
My personal bias goes toward Skyrim, because I'm just more of a fan of how rugged everything looks. Oblivion was brilliant, but it really was a boilerplate Fantasy RPG. Skyrim with the Dragonborn DLC packs the mechanical stuff I liked about Oblivion with a little bit of the visual strangeness of Morrowind.
Ash storms, man. These are even more impressive to me than the game's vanilla snowfalls.
Morrowind > Oblivion > Skyrim (They got more and more forced as they went along)
Questing:
Oblivion > Morrowind > Skyrim (Oblivion has handholding, but can be played without it. Morrowind is dreadfully confusing. Skyrim's quest journal is dependant on hand-holding)
Magic:
Oblivion > Skyrim > Morrowind (No vanilla Morrowind magicka regen is a kicker, regardless of spell variety)
General Combat:
Skyrim > Oblivion > Morrowind (Dual-wielding is what makes Skyrim my favorite for general combat mechanics)
Graphics:
Skyrim > Oblivion > Morrowind (Self-explanatory if you like shinies)
Naughty Mods:
Skyrim > Oblivion > Morrowind (I'm only human, and Skyrim has the better graphics and animations to complement them)
Enemy AI:
They are all rather silly at times
Leveling and skill systems:
Oblivion and Morrowind > Skyrim (Skyrim's leveling system is very over-simplified compared to TESIV and TESIII's more RP-friendly and varied leveling and skill systems)
