Alteration Magic "flesh" Spells
In checking some Skyrim Wikis I found that the maximum damage that armor can absorb is 80%, and this is at a shown armor rating of 567.

My question is do the alteration magic spells of oakflesh, ironflesh, etc, have any effectiveness after you reach the armor cap?

For example will your shown armor rating go from 567 to 607 if you cast oakflesh? Does this in any way increase the damage absorbtion percentage cap?

Though this may have a minimal affect on gameplay I am curious about it.

I don't believe they have any affect. Once you reach 85% damage reduction, that's it, regardless of source.

I suspect your are right but will not know for sure until I reach the 100 level in armore.

Nope, no matter the source, no matter how high your armor rating, 80% damage reduction is the max you'll get.

Though, I'm pretty sure you can use mods that alter the cap point. They'll probably require SKSE, though I'm sure there's workarounds to the part that makes SKSE convenient.

(I've messed with some of the caps before, just not this one.)
