You can, but learning all of them at once will make your character to well-rounded, and combat will likely be difficult.
I suggest learning a couple to a fairly high level, then learning some others so that when you get in combat you won't die so easily (I had to restart a couple of times at level 20-25 because my character would die far too easily)

If you don't have any mods to change you skill tree's you need to be level 252 to get all the perks. If you want to cheat to get there quicker there are two mods you can use to do it quickly and safely. Potion of Ultimate Leveling [www.nexusmods.com] (no DLC required) that can be made inside the Dragonborn Crafting Hall (Dawngaurd and Dragonborn DLC required).
