I've played this game a ton and I decided to play the final build with a group of mods, to again, test them for a collection. I had started a similar testing thread a while back, but then I saw the khajiit like to sneak video on Youtube (it's very funny). It compelled me to play a khajiit, so I started again.
Race: Khajiit, for no other reason than aesthetics. I almost named him Mr. Buttons, but decided on a more sensible Do'Raska instead. I regret the decision.
Major skills: Heavy Armor, Block, Destruction, Alteration, Smithing
Minor skills: Restoration, Archery, who knows what else.
The only skill bonus is in archery, otherwise, the khajiit is pretty useless for this build. It doesn't matter.

Rules for the build
No enchanting No alchemy Limited smithing - can only improve what I find, make arrows, and build materials for the HF homes, that's it. No making armor. No stealing No sneaking Loot everything Only use the bow when on a horse; otherwise just spell and shield or claws.
At level 35 now. All points were put into health and stamina. No magicka; only regen and any equipment I pick up. it's plenty. Currently wearing Steel helmet of major destruction, mage's circlet (mod lets me wear circlets with helmets), ring of major destruction, dwarven armor of major destruction, dwarven boots of either frost or fire (I have conditioning perk so I carry both), steel plate bracers of major archery, the Gaulder amulet (I have a mod that makes it pretty sweet). I carry the Aetherial shield (it is not useless), Spell breaker, and the Shield of Solitude. Zephyr is the bow of choice until I find something better. I got super lucky with some early loot drops and a master lock and had most of my equipment by level 15. I'm looking out for some ebony, but now I'm having crappy luck with drops.
So far, having a blast. It's a nice change from my other builds which I tend to take very seriously. All the major questlines will be done with the big goal being to do the TG without stealing or stealth. It is the final hurrah for this game, as I need to move on and play other ones, but I wanted one last fun build. I'll list the mods being used and the perk spread in another post.
