Your best bet is to just check out the top 100 all-time mods on Skyrim Nexus and decide which of those seem good as a start.
I can recommend Immersive Armors by Hothtrooper. It adds many new armors and shields without breaking balance. It also adds shield painting stations at some forges where you can customize certain shields.
You can pick up a couple of tips in here but you will learn through a trial by fire. I promise you, you will get burned.
Having said that, when you get bored of the original game, there are an ever-growing number of mods to choose from to make it fresh and awesome all over again. If you struggle with mods before you ever learn to love the game, you'll just wind up on another thread telling folks how much you hate Skyrim...lol
Look into a mod before you get it, however. But still,if an armor set looks really cool to you, then grab it. Skyrim is a game and is ultimately about how much fun you have, and certain mods can enhance your experience greatly.
I use that menu style as it's easier to navigate and everything is orderly, it also lets you change text size, style, etc

THANK GOD FOR MODS! for they redeem the developers' console-polluted GREED and repair a lot of crap refuse that is left behind due to platform merging.
Why are we all putting up with this crap? Because we don't have to - when we have mods that fix a lot of the glitched areas of porting.
As for immersion, I find a lot of the complex mods do really transform your game; take Frostfall for example. It makes the cold more integral to the player and game. I mean, why set a game in the snow-laiden mountains of Skyrim, and be able to swim around in frigid water without suffering any detrimental effects???? O_O ? Frostfall makes you think....about the environment you are in. (Thank you so much Chesko). The mod also features a menu where you can customise the many settings to the mod :)
Be aware, some mods require a modification program called SKSE; (SKyrim Script Extender). This mod allows the extra scripts to run within the mod that the Creation kit does not possess. It's okay...it is just another mod and is FREE, like all mods. It does not demand any RAM at all or a lot of processor power :)
Along with the more complex mods come complex management, then again, we have individuals who spend a lot of time investing in helping us!! :D YAY!

Enjoy modding your game, the only thing you need to be aware about is how mods work, and what to do to sort any problems out. The more research you make the effort to do, the less problems you will run into :)
