Uncapper
Okay so I have the uncapper installed and it's working fine, but I can't find the right combo of everything to make leveling feel "perfect" to me. I keep having to mess with it constantly. Anyone mind sharing their "PCLevelSkillExpMults" settings? I'm basing things off of PC level. Or anyone know where I can find some premade ones to see how those work?

The mod Skyrim Redone includes a customized "Uncapper ini file", it slows down how fast each skill levels, and gives you 2 perk points every 5 levels [this can be tweaked back to 1 by yourself manually].

You don't have to use Skyrim Redone; but you can just download the mod and extract only the "Uncapper ini" file from it. Of course this will have to be done all manually.
Thanks I'll take a look at it. Maybe it'll give me some ideas for mine. I feel like crafting provides way too much experience (so I nerfed the ♥♥♥♥ out of it) while combat skills aren't enough. Every time I tweak combat skills I just can't quite get it right either too little or too much.

The main things I changed using the Skyrim Community Uncapper was lowering the PCLevelSkillExpMults of Alchemy, Enchanting, Lockpicking, Pickpocket, Smithing, and Speech down to 0.25, because I didn't like how fast I was leveling up my character when using those skills.

Leveling up my character while lockpicking really drove me nuts until I started using the uncapper. You open so many locks in this game that you start to notice how quickly you are gaining levels and I prefer leveling up more slowly.
