I will, sure.
I am planning on onehand + shield.
It get's so silly after Expert, that it is wiser just sit down and let your follower kill the enemy for you, because you are not doing damage yourslef. One hit from Lydia equals three of yours, (minus perks you might have invested to combat damage.)
I have used mods that affect to enemy AI, strenght and variety. It gets more interesting to fight against smart and powerful enemies in Adept or Expert level, instead of repeatedly spamming mouse button, while beating those straightforwardly attacking louts, without doing a lot of damage.
Frostfall
iNeed
Hunting in Skyrim
OBIS (Its for bandits)
Immersive Weapons
Immersive Armour
Sure.
T3nd0s Skyrim Redone by T3nd0
My main system. I am using all other modules, except Standing Stones. I have another mod affecting to them. This makes the game much more interesting and has enchached AI module for both enemies and zones.

Frostfall - Hypothermia Camping Survival by Chesko
Not a difficulty mod as such, but adds to previous one trough Wayfarer. Keeps the time between combat very interesting and immersive.

Enemy AI OverHaul---Revenge Of the Enemies---No Scripts Version by MyEvergreenHometown
Not recommended for higher difficulty levels. It is balanced for Adept. I am playing it with Expert and regretting it dearly sometimes, when powerful bosses are tossing gazillion fireballs at me.

Skyrim Swimming Enemies by Vlaka
Removes one of the most abused AI bugs in the game. Now those snowbears can get to you over the water. If you have any Enchanted AI for enemies, they serach you from farther distance than before, so watch out: they are no longer staying at the others side of the river.

Dragon Combat Overhaul by ApolloDown
There are other dragon mods, but this is still my favorite. It does not add to difficulty that much, but with SkyRe and EAOH installed, it is just a good thing. My favorite part is the one that is lacking from other mods: flight impact from wings.

Civil War Overhaul by Apollo Down
Another mod from ApolloDown. Civil war gets interesting, when enemy patrols are no longer just passing by and fighting them actually has impact in game. Remember that you can loose the whole war, if you install this.

OBIS - Organized Bandits In Skyrim by Indigoblade as well as JobVanDam Tonycubed2 and Forzane
You are screwed: stomped in paste and left to rot. OBIS is a nice mod alone, but becomes close to harcore with SkyRe, EAOH and Swimming enemies. Basically, run.

Death Alternative - Your Money or Your Life by BralorMarr
Death isn't a punishment, if you can just lod and keep fighting. Loosing portion of your gear for enemies and then getting a change of being robbed after that by thieves starts to hurt.

Death Alternative - Captured by BralorMarr
Getting caught by Falmers or vampires adds to difficulty quite a lot.

Loot and Degradation by isoku
Did you bring your dagger with you? You better, because your sword just got broken. Actually, your armor is in pieces as well and those enchanched thugs from OBIS are in a bad mood...

There are more, but I think you get the idea for what I am using in my game. These should keep you busy for a while, if you decide look some of them up for your own game.
Edit:
I did not see this while writing. Nexus is free and easy to use. I suggest you visit it's vaults and see what else you can find.
Edit 2:
Fixed links.
I don't see anything buggy in it, except occasional animation failure after blackout stage. It is rare and being worked on, so I haven't found it too problematic.
