I'd say the Summoner and Series EV are must haves as well, though you could skip Jester and Barbarian. Summoner's minions and real time strategy capabilities are lots of fun, and Series EV has reflection walls/tower buff beams as well as being fun to play. I'd recommend the Tinkerer's Lab as well because Lab Assault gives you utterly amazing rewards on Insane HC.
New Heroes DLC (just gender swapped heroes, but Countess and Initiate are so helpful thanks to their increased movement speed) might be worth your time as well, but it's skippable if you aren't wanting to get into endgame DD.
Pretty much everything else is skippable honestly. Barbarian class is good dps but having a hack n slash character in a tower defense game gets boring really fast, and Jester is a cool class but she's too unpredictable for my liking. You could definitely do without either of them. They're not bad, but not must-haves either.
Jester comes with an awesome map called King's Game but I'm not sure if that's incentive enough for you to grab it or not.
