If you think the engine runs like crap now, you should have seen it before Rearmed!
You may want to elaborate on "bad controls," but I can guess.
I have the sensitivity all the way down in-game and I always calibrate my joystick in the Windows control panel before launching the game. This seems to help with old joysticks.
Also, trim your aircraft! My joystick buttons 1-6 are all three trim axes. If I am flying the medium or heavy then I'm flying with mostly trim and throttle. And don't fly them sideways!
If you have to you can turn the difficulty setting down to veteran.
The Hind is INSANE. If you want to fly this awesome military helicopter then be prepared to play it on veteran difficulty. I have fun with it on expert but it is pretty wild.
The light is the easiest to control and most fun to play. Here is a video of the light in the Rearmed beta:

EDIT: Ok, I just watched this video and maybe it isn't the best example of "controlled" flight!
If this kind of flying doesn't appeal to you then you may want to skip Take On. The campaign is short and the mission editor is pretty hard to use for the average gamer (unless you're just placing objects to shoot at).
I agree that everyone should download DCS World. I have both A10 and KA50. Also, long live Falcon 4.0!
The button mashing and ramp starting in those games is great, but I really only start "ready to taxi." I've only started the Falcon from the ramp once and never in BMS. I do value being able to experience the procedure though.
Since Take On Helicopters is an incremental improvement of Arma2, I think the startup procedure just simulates having a startup procdure, rather than jumping in and mashing on the throttle until you go up (like Arma2, BF3, etc).
Also, you probably don't want Bohemia programming your cockpit logic!
DCS and Falcon 4 BMS are your pure simulators but I think Take on Helicoptors simulates flying expertly.
In the demo my Chopper was spinning crazy. Actually it was more like a right hand roll.Something to do with the trim.
I'm using a Cyborg X which has a profile in the game itself. I couldn't be anymore ready for this game but once it's loaded......no fun is to be had.
You must be flying with all kinds of helpers on in the easy setting then.
It's rolls to one side constantly, no matter what control config I use.It's broken.
I've been using PC's since 1992, i'm not new to any of this.
Also you obviously had the wrong settings for Black Shark 2 , turn the cockpit display resolution down to 256 and turn the tree visability down, job done ;)
As far as Blackshark goes ... the effect does not exist with counter-rotating rotors. When DCS does manage to simulate a single rotor helo, I think you'll notice some different handling tendancies. There is a noticeable reaction where the main rotor wash interacts with the tail rotor, and vice versa ... just two of the things DCS Blackshark pilots have never encountered before.

It's like a full hard roll that even pushing the opposite direction on the stick doesn't level it up.
As for a single rotor in DCS, Huey is coming in a month or so.
Disconnect any gamepad you have connected. You'll also see this effect on the X52 if one of the sliders is a) set to trim b) not centralized.
Open up the windows controller panel 'devices and printers'. Any game controllers will have an entry there you can check properties of.
I have 580SLI and runs very slow.
I think we have been abandoned by the developer.
The game needs to be optimized urgently.
Not going to happen.
Arma is just as bad....
