Two screen local multiplayer?

Hey all, I have come across some guides for split screen multiplayer on PC, however I have three 22' screens, and cousins to entertain all week, I was wondering if there is a way I can do local multiplayer with one players view on each screen, so that one can use the keyboard/mouse and the other a gamepad.
