Also, depending on campaign, you can get her to chase you and then climb up and sit at the top of a ladder. She can't attack you while she's climbing and you can kill her at your leisure. I love doing this when she is spawned in the gauntlet in the next to last part of Dark Carnival. lol

You have to be on the ladder, she can hit while finishing climbing.
This also works with tanks, and every other SI.

I think the best advise is to avoid her whenever possible. It you must kill her, a well timed shotgun head-shot or, two with melee will do it.

You seem to completely disregard the issue of gamemode and difficulty here. Try your suggestion on Realism Expert...

Walk up to her when she's calm and unload your auto shotgun into the back of her head. Insta kill.

It's actually possible to kill a witch with an auto SG on realism, I've seen it done before- not in her back, though, but to her head. If I had to hypothesize based on nothing, maybe it's a headshot multiplier thing that helps cancel out the sg reduction dmg in realism.
