Both of these castles require siege towers which is good once you have them since it gives you more time to respond if they are under siege while you are away. It also makes them more difficult to take in the first place for the same reason.
Jameyyed Castle is set between two ridges with one long outer wall. It has a central area to fight through to get to the keep in the back. It looks quite nice.
Uhhun Castle has a square outer wall and the interior is taken up mostly by the keep which has a couple of levels to fight on. It is a compact fort with little interior empty space which is common in the Khergit castles.

If you do not have a castle already, then take the one with the smallest and least powerful garrison. Then use it as a place to garrison about 200 troops until you can take a town.
