Anyway without mods, conquerors are usually pretty straightforward but some bosses or enemy types are harder with melee. Main thing with the minotaur lord is to try and avoid getting hit by his main attack (actually true for most bosses), but if you do get hit and it doesn't kill you, run away and heal. It'll help if you can use one side of the room and clear out the traps so you're not constantly taking damage. Anyway he's easier to hit-and-run than to stand there trying to tank him.
