Is it better to sell Killstreak Fabricators, or Killstreak Kits?
So, I finally decided to commit the time to play Mann Up Mode properly, and once I finished my first Two Cities tour, I got a Professional Killstreak Wrench Fabricator.

Cool.

I want to sell it though, so that ideally I can play more Mann Up, or possibly something else. (please give me your suggestions).

But should I sell it as the Fabricator, or should I make the Kit first?

I have absolutely no idea, I mostly trade weapons and hats, nothing this expensive.

I wouldn't sell it, Proffesional weapons are pretty valuable stuff from what I remember.

Depends..
Some Fabs are not worth to craft.. I have Sun-on-a-stick, boston basher and eviction notice professional fabs, no one would ever buy that.

In most cases it's better to craft the kit.
Just check their prices on the steam community market.

Some big name trader with no skills in TF2 could probably trade with you for a bit of a profit, or you could trade with anybody else with a normal price as they are not that rich and are good at the game.

craft them into kits so its more valuable, unless you are too lazy to sell them. fabs are quite valuable too.

You have to work out if the fabricator you're crafting is worth the cost of turning into a kit. After adding all the robojunk, you still have to put two specialized killstreak weapons into it. You're looking at around 4 keys to turn a pro fab into a kit, so that needs to factor in your decision to build it or not.

Kits are worth more if you're willing to complete the recipes.

Fabricators start at ~$25, the completed kit ~$40 ($15 spread)

Assuming prices stay this way you're better off completing it. Typically the spread is closer to $10 (2x $4 specialized weapons, about $1 of pristine, and $1 of regular parts)
