What class/Mercenary do you think would fit the Vegetarian lifestyle the most and why?

None of them, because humans are biologically Omnivores and we require protein, plus are designed to eat, meat.

Being a Vegetarian is nothing but deliberately harming yourself and being a difficult prick at parties or events.
