The following analogies are brief and may not be 100% accurate because of that lack of experience.
Shadow of Chernobyl is a little dated but it felt very... "ripe" to me when I played it. I recommend starting with that.
Clear Sky was interesting but it was, well, I wouldn't go so far as to call it a mess but it was a different experience. Different in a way I can't put my finger on.
Call of Pripyat does feel too open and sandboxy for an absolute new player to play as their first venture into the STALKER series. You probably won't know what to do and you won't be able to make much sense of the story of it without having experience in the prior games.
Bottom line is, I suggest starting with shadow of chernobyl or clear sky. None of the STALKER series are inherently bad games, in my opinion.
I have questions about health right now but between the wiki, YouTube, and reloading and reloading and more reloading of the last chapter....well I'm still alive again (after so many deaths) and I'm slowly figuring it out.

People dont like bugs and cant cope with the difficulty so they avoid it.
Nobody can tell you which one to start with, some people i know liked starting with Clear Sky, others hated it and liked starting with SoC.
Me i started with CoP and loved it.....
So what does that tell you?
You have to try yourself and see what you like best, just because others tell you to start with this or that, doesnt mean its the best for YOU.
I would skip CS altogether as others have said, awful buggy game and totally linear like Metro.
