To the actual topic. There are way more "wide-open" territories compared to the previous games. Most of the "dangerous" stuff can be seen from a distance and avoided. Obviously, you will find yourself fighting in close quarters as well. In doubt, you can simply go fully save scumming. That's pretty much how I played Misery on my first week. There's no way you get stuck if you quicksaved 20 times during a 3 minute fight, right?
Half their shots? Did we play the same game? Last time I can recall anytime I were in the open or popped my head out for too long I would be dead in two seconds, and even when I took cover the AI was crazy fast. Maybe I will revisit SoC one of these days...
You are right, autosaving is a nice feature that would come in handy.
The mutants in CoP are much more aggressive tho, and the dangerous ones are around even at the start (bloodsuckers, snorks, controllers, etc). Those are really your main threats.
Exactly, and I remember vividly entering a human encampment (a few buildings and some abandoned cars in the middle or something) and it was filled with guys that were armed to the teeth, right at the beginning of the game.
I explored a bit after that segment and would come across similar encounters except some were snipers and I had a measily 9mm I believe. I'll have to check it out again now..
I love the setting, theme, and survival emphasis.. maybe I just didn't give it enough time.
CoP is only slightly difficult near the start and CS is pretty easy the entire time.
Most of the fun in call of pripyat comes from soaking in the environment, artifiact hunting, and from the stories shared by others through side quests.
In all honesty, the hobo-phase of stalker games and their mods is the most fun section, because everything is a risk. Run into some wild dogs in a leather jacket, with just a 9mm and a knife? Better be a hell of a dancer or have a solid obstacle to cower on top of. Run into them while wearing even a mid-game armor, while carrying any form of non-double barrel shotgun or automatic firearm with reasonable ammo supply? Just laugh at the dogs as they fail to do appreciable damage, while what they do can be medkiited through with ease. The same even goes for fighting human enemies. Taking on anyone in a gunfight with low ammo, not many medkits/bandages, and poor armor is a very big risk. Late-game gear means anyone not using a 7.62 rifle or better is a joke, at least in vanilla.
Most mods also either extend the hobo-phase or make the game as a whole more dangerous.

The only explanation for you thinking that is that you skipped most of the side missions. I've played through SoC and CoP several times and now that I know what I'm doing pretty much the whole way through, I play through them in roughly the same amount of time. How much time does it take you to do everything in SoC? How much for CoP?
