After that, you have SS2 and SS3, which are both very different from each other in artstyle and even in combat style. I personally prefer SS3, but SS2 isn't that bad either (but you might be heavily put off by its type of humor and artstyle; but this might happen with SS3 as well, they sit on two opposing extremes when it comes to artistic design. The fans are insanely divided about these two, with almost no overlapping.)
Then, you might like the indie games too, but imo, only Double D worths the effort, because it's really really great, very well made departure from the original FPS gameplay.
So from what I understand the HD remakes are the EXACT same games as in levels, weapons, enemies etc in a better engine? And what minor features are there missing?
There's also a missing weird-physics effect in a few campaign places in the HD versions which angered many fans but which isn't really a problem from my point of view (I'm also a fan). It was fun back then, but it's only present in like 2 or 3 places which doesn't even last more than just a few minutes.
If your hardware isn't from the stone age, you should be able to run the HD remakes pretty well.
You could even consider to buy the full Sam pack to have everything.

There's no SS2 HD (yet), so I guess you mean The Second Encounter HD. Try not mixing the two, TSE is the second half of SS1 officially. :P
Btw, if you buy both SSHD games, you don't need to install The First Encounter HD. Just install The Second Encounter HD, and the two games will merge together inside that game.
The biggest feature that was cut from Serious Engine 2 is directional gravity, so all the cool rooms that use it were replaced by something lame in HD. For example, in TSE Classic there is a tube-shaped room in which you can walk in any diraction. In HD, the room is still a tube, but you can't walk on the walls, and instead there's a platform that moves you around the place.
I like the HD version better (mostly because of Solais' mod ), but Classic has a different enough feel to warrant a playthrogh, imho.

Serious Sam II is divisive, but my favorite Serious Sam game.
Sam 3:BFE is very modern, brilliantly illustrated, and the some of the very best shooting action. It's a raw, one man wearing jeans and a t-shirt, dropped right into the thick of it experience. Don't worry though, there's plently of time to catch your breath. It starts lightly too, as all Sam games do, to ease new players in, I guess.
Serious Sam 3:BFE (Before First Encounter) is the chronological start to the series. Then The First Encounter follows right where 3 left off. (The First Encounter was released first, and many years ago though.) Then the Second Encounter follows that. Graphically and technically you'd be taking a slight step back with TFE/SE. Therefor again a youtube look-up might give you the hint whether to play or not. I'd say play them. For sheer shooting and good settings, they are a gutsy format. The HD graphics are really OK on top of TFE/SE which are twelve years old.
You can finish with SS2 as it's the last in the timeline. I am waiting for the remake of it.
