Tutorial for beachhead strat?
Can't find anything on google, only a few completely outdated articles. How do I go about it properly?

Beachead mainly involves bringing in a mobile builder and building a whole bunch of defenses on the wormhole. Ion cannons are not that strong if you can take down the system fast.

What system? Ion doesn't even need supply, let alone the fact that in 95% of all cases there's an adjacent AI planet.

In the system you are attacking. You can capture ion cannons by destroying the AI command station and then building one yourself. The AI even built an ion cannon mark V as I was destroying a command station and I said thank you. Gotta love RNG.

This just blew my mind. What other buildings can I capture? Fortress? Eye?

You can capture ion cannons, mass drivers, radar dampeners, counter spies, blachole generators, gravity drills, ETC.

You can not capture fortresses or eyes. I have destroyed super fortresses with a sabatoge hack before using ships that forces enemy to be within a certain range to attack since super fortresses have near infinite range.

If in doubt, look for the "Captured On Planet Ownership Change" attribute on structures.
