We're developing the game using Unity, so publishing to Linux "should" be easy. However, because we don't have a Linux machine to test it on I think we'd need to get this setup first ... or at the very least a bunch of people in the community that would be willing to try it out, so that's why we haven't committed to it.

What you are waiting for? You can setup a beta via steam. So everyone which owns the game can participate as Linux tester. This way you will get lots of willing testers

To setup a linux machine is easy. Just give it a try. It's easier then you might think :)
