Personally I'd love to see some sort of Total War: Mesoamerica or something like that. As Blue Kight said, that was addressed in an expansion to M2 but it was not really that nice---or historically precise.
Maybe something with ancient Egypt and Mesopotamia would be cool.
Warring States period would be great, because Sun Tsu/Sunzi is so iconic, and would lend leverage to the game. But the Collapse of the Han, Six dynasties period, or the Rise of the Tang or Song dynasties could all be fantastic.
And of course there's the Manchus, Northern Tribes, Koreans, and Vietnamese (in modern day geography) which all can lend diversity to a game set in and around China.
China has such a diverse and beautiful landscape which would make for such an epic setting.
