How to change resolution:
Hold Shift button while clicking play in your Steam library to bring Unity menu. You can change the resolution there.

Hi, I am on a Mac and I cannot change the resolution. I tried holding down Left Shift while clicking Play on Steam but no window pops up. I think you should create a proper resolution screen setting inside the game as it is annoying not knowing how to do this simple adjustment. Thanks.

Yeah the screen will be restored in the update. It's just a quick temporary solution

On Linux and i guess on the Mac to all unity games resolution set like this:
Game --> Right Click --> Properties --> Set Launch Options --> "-screen-width 1920 -screen-height 1080" (without quotes)

So what's a "Unity menu" ? Is this related to the Unity desktop thing Ubuntu uses ?
What about people who use a regular desktop (KDE, Gnome, XFCE or whatever) ?

It's about Unity Game Engine menu, not a Unity Desktop Enviroinment menu

Oh, ok. My mistake then. Thanks for the clarification.

Unity Game Engine does not, as of yet, have a GUI for the pre-launch configurator. That is currently only available for Win and Mac.
