If you have a manual shifter and clutch and also paddles on your wheel, each car is handled based on its type in the game, if its manual- you will need to use shifter+clutch (although without these you can use paddles) and paddle cars you must use paddles.
AC is not GT- its a simulator and each car is operated in its real-world fashion, there is no forcing manual gears in a paddle shifter car.
You know that anytime you can swap pad-shifters to H-shifter IN REAL LIFE, right?! So what we are talking about... Even a 2017 F1 car can be with H-shifter, there is no restriction ... Call that Tune, or whatever you want :D
Yeh and you can put a V8 in a Mini Cooper in real life, but so what? What does that have to do with Assetto Corsa having a particular model of car in the game with a set transmission type?
You cannot use a manual shifter with cars with paddle shifter, the whole car is modelled around the transmission and other things being set, these cars don't even require a clutch pedal, how are you going to map this to act with manual shifters? You can't and it would be a `bodge job`- therefore there are plenty of manual shifter cars to enjoy without wanting to `break` the game and cars.
I'm sorry to disappoint you, but even F1 cars have clutch pedal, otherwise how could they start rolling? ... Anyway, you'll see

If the paddle shift cars with automatic clutch are forced to use H shifter will the clutch function be automatic, or will it be correctly mapped to the clutch pedal?
To be honest I dont really tried it out, as soon as I figured out this I started making the video and finished now :D
But you can try it out, quick and easy (i hope, at least for me :D ), and you will see. You can restore it anytime
Came across this as I needed to convert a car from semi-auto paddles to manual with clutch
You do as Johnny said, quickbms and extract drivetrain.ini from data.acd
This will allow the shifter to work, but no clutch
But to get the clutch to work, which isn't covered in Johnnys Vid, You Also need to edit in the drivetrain.ini

This along with Johnnys guide allows the car to be a fully clutched manual gearbox
