How does one recruit calvalry in this game?
I got two calvalry units but I don't know how to get any more?

As your empire and influences grow, or due to quests, the type of units available at recruiting settlements increases.

Firstly, you need to conquer London or Viconium, as per the event. If you haven't had that objective yet, then just continue finishing the objectives you have. Once you have your stronghold, you will gain access to research during the winter. From there you can prioritize researching cavalry. Once the research is done you'll be able to recruit cavalry from any village or stronghold.

I did research tourney knights and they won't show up as recruits, the same goes to the long axes I researched too.

Go to a town that shows "recruitment available." Double click your hero and click the little horn icon on the right. There should be cavalry listed in what you can recruit. I haven't conquered Vircarelknalg or London yet, so I don't think that's a problem.

The problem was there is a mechanic with recuiting that I was not aware of. I couldn't get any troops I researched until a bit later in the game. I think it has something to do with growing towns?
