Skeletons I might say are most annoying, as they always come to life right at the worst moment.
And the crocodile men are the most 'NOPE' enemies, as I try to avoid them as much as possible.
Runner up would be tikimen. They aren't difficult to kill if you get the drop on them, but they are quite capable of killing you with one throw of their boomerang if you're unlucky enough to bounce on it a few times.
Monkeys. Not only do they LOVE setting up shop directly above spike pits, steal and use your bombs, and delay you and stop you from moving for ages via stunning you and potentially killing you via ghost, they have the audacity to potentially enter the Olmec fight, the worst possible time to be stunned for a unusually longer length of time than normal.
