Interrupts and Opportunist

Do interrupts count as 'attacks of opportunity' for the benefit of the opportunist promotion which gives an extra attack of opportunity each round?

That would allow a hunter to get two shots in each turn without any aim penalty, and could be really scary combined with point blank shot.

Interrupt acts as a delayed attack. You don't attack the current round, so that they will attack any enemies that get within a 6 hex radius. They don't act as an attack of opportunity.

Thanks. While I have your attention, also had a question about critical hits: do they ignore armor? Would a critical hit made by a character with the skill that lets you ignore 7 points of armor do more damage, or the same amount?

Armour applies the same way to critical hits as non-crits, critical hits just have their damage multiplied by whatever the crit multiplier of the weapon is.
