If you feel like you'll be missing out, then just play MGS 1,2,3,4 and read up on the story of the others from the official wiki or watch some good youtuber explain it or whatever you want to do. Seriously though...you've got to play these games. Each one is so, so, so, so good.
Just a friendly reminder that the Nintendo titles are not part of the official canon and they are horrible rubbish games. The original MSX versions are the way to go if playing MG1 and MG2 interests. Both of those are available in most of the current collector's editions since they shipped with MGS3 for PS2.
I also suggest to play the games in the order they were released. MG1 and MG2 can be skipped. However while later games explain the stuff that went down in them the references to them made in later titles (especially in MGS1) can be bit of an eye sore. In addition both, MG1 and especially MG2, are really fun games if you get into them. The whole "cinematic stuff" started with MG2.
But just play the MSX versions. Other ports fail in game design due being almost entirely different games with the title "Metal Gear" slapped on top of them. The Metal Gear 2: Snake's Revenge (There are two vastly different "Metal Gear 2" games) isn't even a Metal Gear game. It was made and released without the consent of Hideo Kojima.

There's the "Metal Gear Solid Encyclopaedia" available at least from PSN which I suggest to download to fill in the missing pieces of the story. The Portable Ops and ACID! are fine games but only really worthwhile game for PSP is the Peace Walker.
