I've yet to read any bad reviews that actually offer any viable points that would prove that Project CARS is a bad game. Most are just whining that they "didn't get what they expected", whatever that's supposed to mean, as if the whiners hired the game developers directly, or something equally ridiculous.
I bought the game before I had read a lot about it, either officially or from user reviews, so that I wouldn't have a biased viewpoint one way or the other. I am a little surprised that it's not the hard-core simulation that the trailers might have conveyed, but I'm actually a little relieved that it isn't because the last thing I really want is some minutely detailed sim that almost requires you to have a frickin' PhD in automotive engineering. Extreme depth is not FUN. It may be realistic, but most of the time real life isn't much fun, which is why we play GAMES.
Like you, OP, I gave the game some TIME before placing judgement on it, and so far, I'm having a blast with it! It's got a nice combination of detail and simplicity that makes it engaging and challenging, but without crossing over into stupidly frustrating. (Yes, rFactor2, I'm looking at you, a$$hole.) NO racing game should require you to actually know how to race in real life in order to get anything out of it. And contrary to popular belief, knowing how to race competitively in a racing simulator does NOT make anyone special or give anyone any real-world racing abilities or knowledge. You're still just a dude (or chick) sitting at your desk, pretending.
Be easy on the throttle/brake, gear changes.
You can't drive cars in this game just like you did it on GTA5.
Automatic mode is trying to keep the highest revolution on wheels which causing the car to drift and it easily visible on a tire view, which i have oversee on a first day.
Game may became user friendly if you will put all assists on.
But it will not be fun after this IMO.
This game is close enough into SIM racing if you will turn off all assists.
I am playing both Assetto Corsa and Project CARS, and enjoying both of them.
I'm not saying that the game should not offer challenge. I say that the challenge should not be preceded by hours of tweaking settings. Bad default settings of force feedback in the game is responsible for many unhappy customers and negative reviews, yet when you tweak it, people call it awesome. Default settings may seem not important, but it has great effect on user satisfaction.

It has to be the player to adapt the game to it's own style or expectations, since the steam forums are like a cascade most of the times their help requests end up overwhelmed by others and they become frustrated with the game or the lack of support.

Depth always brings a level of complexity and can be very hard to translate to sheep friendly information/operation

I'm sorry, Leviathan, but this is very poor excuse on a fact that you neglected user experience in pCARS. The game found most of its players on consoles. And consoles are a place where you push a button and play. Reading manuals, tweaking settings, finding answers on the forum... these are the days of Flight Simulator 6.0 for Windows 95. Something like this in 2015 and on consoles is absolutely unacceptable. You at SMS should find the best presets that fits the majority or adapts a game depending on what hardware is detected. And if someone comes from a minority of hardcore players, he simply change little details in the settings to fit his specific needs to get 0,01 sec better lap times. To make a great game even better. But changing default settings to a custom one obviously makes a difference like day and night from what I read on forums.
There is an option in the game that asks the player what is his experience in racing and how much challenge he wants to get. Something probably went wrong in this area (too).
It is sad that user experience use to be the last thing developers have in their pipeline. You unfortunately are not an exception. And since pCARS have 30+ objective bugs at the moment that will take months to fix and lots of other problems with AI, damage model or performance, which will probably never be solved in a satisfying way, it is clear that you did not even reach that final stage of development that should make the UX pleasant. E3 is coming, GT7 a FM6 will get lot of attention and we need to release the game in advance... Not finished? Doesn't matter.
I'm disappointed with the level of quality you consider satisfying. When I'm at it, let me quote a guy I met here in the forums:

(Oh yes, I'm sure someone will abuse this sentence and say "not played the game? shut up! your opinion means nothing") I just watch video reviews and gameplay videos. Those glitches and backlogs that are visible ALONE (+ glitches that affect others) make me not buying the game now. What other problems would I find when playing the game? I do not want to even imagine that.

There is one more thing. As far as I'm concerned, polished software may be controlled even by a monkey, and since the polished software does not allow unwanted actions, the app never behaves unreasonably. We Czechs call it "blbuvzdornost". It could be translated as a resistance or immunity towards stupidity (meaning that the user makes inappropriate actions). If pCARS was a polished (I'm not talking about our neighbours Poles now :-)) software, things like this could never be captured on a video.
