The other day I discovered the easiest way to take him out. When you've made it up the first couple of ladders and you are facing the dog, although you can't shoot him with a bow and you can not jump that distance, you can take your trusty dagger, make a jump close enough to him, and you'll be able to reach and stab him! Maybe it's an exploit, but it is a really easy challenge if you use your potions like a simple regeneration one. I personally love the challenge to see if I can run the entire distance without help and get him before I die.
