Your guys can only work the farm when it's time to harvest. The crops will consume the water and then grow on their own.

You can check their progress by clicking on the farm. :)

once theyve hit harvest time they dont really need water anymore (so if you must you can transfer it somewhere it really is need at that moment), unless you take sooo long to finish the harvest without the water that the plants deteriorate. If theyre going bad from lack of water you can add more and they should restore farily quick, but if theyre going bad because its been too long since they reached harvest point you're screwed

edit: do not attempt a Freedom Seekers start with .25 hunger, all everyone will be doing is food stuff for 3-5 weeks and constantly starving the first 2-3 weeks unless you steal or direct enemies into each other for easy pickings* had to buy bulding materials because there was no time i could afford to spend away from the food generation to do mining for the first full month
(and i had to go into town 2-3 times to buy food)

On a related note, is there any way to automate adding water to your farm? Or must you manually add it via inventory from well to farm screens?

Shift click to assign a job to someone. There's bugs and its not totally reliable, so keep an eye on it and experiment to find what works best.

im pretty sure my people automatically deliver water to the nearest? farm if the well gets full and there isnt any water storage built, without any command to do so it may also only happen if they cant add water to inventory

Got it, I'd been manually filling it to the farm maximum number, but the NPC's will only add water when it is nearing zero with no barrels stored in the farm.

Also notice that if your people don't have inventory space (maybe they have other hauling jobs, maybe there is overstock in another supply chain, maybe you told them to loot some armor and forgot they had it, etc. ) they may not do what you expect them to do.
There are other combinations of hauling / operating that will make they spaz out. Just keep an eye on them and fiddle till things go like you expect they should. (don't be afraid to assign you're partially Idle farmers something "not farmerlike" if it makes things click)

I suggest having always at least one manual well, it was not funny when all my fields went dead during a windless period.

if you have a manual well shift click someone on it they should work it till the water is full i.e 10 kegs then they will start transporting those to farms storage containers and crafting stations it helps if they have decent labor skills. you may have to maually load the farms for a second till your worker fills the well.
